A HOST of dishes were on show at Brasserie One at last week where the award winning restaurant showcased the fruits of their labour from their new urban kitchen garden.
Brasserie One at No.1 Pery Square, Hotel & Spa, Limerick – one of top 100 restaurants selected on the Bridgestone Guide for 2011, has just introduced the city’s premiere ‘Kitchen Garden’. Designed by horticulturist and urban farmer, Valerie O’Connor the ethos of the ‘Kitchen Garden’ is to create an authentic food-growing hub,

where guests at the award-winning hotel can dine al fresco and sample the artisan menus at No.1 featuring the home grown organic fruit and vegetable produce.
‘Organic growing is a real focus at No.1 Pery Square as people are becoming more aware of the need to grow your own and support local industry. Our philosophy at No.1 is to serve quality food, using the freshest of local ingredients from local suppliers with menus sensibly priced. Guests at No.1 are then assured they receive a real taste of Limerick’ states Alan Burns, head chef at No.1 Pery Square.
Alan’s menu included a Panzanella Salad, a Summer Vegetable Soup, Grilled hake with warm crushed pea salad and marjoram buerre blanc, a Glazed beef cheek, crushed celeriac and salsa verde and a Summer Berry Sabayon.
