Young Limerick baker has recipe for success

A YOUNG baker from Newcastle West has been crowned this year’s winner of the Renshaw Cup.

Ayesha O’Connor Jones was tasked with developing a product suitable for a coffee shop.

In the space of four hours, she whipped up a mud cake with Dubai filling coated in chocolate, a small round Madeira cake with four different fillings with a pistachio base and a breakfast morning bread with a Dubai filling and a crumble.

Ayesha has a completed her FDQ Certificate in Professional Bakery with Limerick Youth Service Community Training Centre.

She is the second Limerick winner of the cup following in the footsteps of Paul O’Brien who won the prize in 1993.
