YOUNG Limerick chef Naoise Ahern is representing Ireland in the kitchen at the Rotary Great Britain and Ireland Young Chef Scottish and Irish District Competition.
Held in Scotland, the Coláiste Íde agus Iosef student will showcase his culinary skills, creativity and professionalism throughout the competition, preparing a pan-fried buttermilk chicken escalope with pappardelle pasta, tomato ragout, asparagus, parmesan and basil oil, followed by a Mikado biscuit dessert with raspberry, lime and coconut.
The school would also like to acknowledge the guidance and support of Chef Tom Flavin, who has mentored Naoise throughout the process.
