Will It Be A BBQ Summer?

WITH a beautifully bright Spring-like start to the week, one might think that it could be a good Summer. It’s a long way off yet but the weather is warming up nicely but for food lovers, it’s not the end of the world if the heavens open because you can always cook up some delicious recipes in your own kitchen. Of course, it would be nice to have a long hot summer, but it’s something we cannot control.
Bring the scent of Summer to the table with a tasty treats whatever the time of year.

Mediterranean chicken burgers

WHAT YOU NEED
450g minced chicken or 4 breast fillets
1 clove garlic, crushed
1 unwaxed lemon
2 tsp sun dried tomato paste
1 tsp chopped basil
1 egg white
Extra Virgin Olive Oil

for the relish:
3 tbsp chopped parsley
1 tbsp chopped basil
1 shallot, finely chopped
2 tomatoes, skinned, seeded and finely chopped
Lemon juice to taste.

WHAT TO DO
If using chicken breasts cut into chunks.
Place in a food processor and chop for about 30 seconds. Be careful not to process too finely. Put the minced chicken into a bowl with garlic. Grate the lemon zest and add with the sun-dried tomato paste, basil and egg white. Season with salt and pepper and mix well. Squeeze the lemon and put the juice aside.
Form the mixture into eight burger shapes.  Place the burgers on the foil and lightly drizzle with the oil. Cook under a medium hot grill for five minutes on each side.
While the burgers are cooking, prepare the relish. Mix all the ingredients together, adding enough juice to moisten. Flavour and season with salt and pepper.
Turkey also works well with this recipe and is lower in fat and calories than chicken.
