SIXTEEN-year-old County Limerick girl Laura Stack was joint third in the 2015 Munster Apprentice Chef final in Tralee. A Transition Year student at Hazelwood College, Dromcollogher, Laura’s dish was breast of duck with pommes anna, crispy vegetable wontons and sweet potato purée served with a honey and clove sauce. Laura, from Springfield, Dromcollogher, said, “I’m delighted to have taken part and thanks to my teacher Noreen Daly for suggesting it to me. Last summer was the first time I had ever eaten duck and it inspired me to enter a duck-based dish for the competition.”
